Life is so full of "shoulds", "coulds", "would haves"...blech!
During a coaching session, I wanted to create a way to bring more joy into my morning routine. I love waking up and practicing yoga and I love the idea of waking up and sitting in meditation, but when the alarm actually goes off in the morning, I don't leap out of bed to do either of those things!

Since I had 1/2 of a jar of crushed tomatoes left from making the stuffed peppers, I decided this was also a good week to make spaghetti squash. I usually just add ingredients to boost a jar of spaghetti sauce (or do a roasted tomato one), but I took the chance on a spaghetti sauce with the crushed tomatoes.
This is big for me because I actually really don't like tomatoes when they resemble/taste like a tomato. I'm even known for picking...
I finally did it! I finally made stuffed peppers! And I totally miss-judged the rice/pepper ratio, but I ended up with lots of yummy Spanish Rice left over.
As always, I didn't follow a recipe (and I'm writing this post a little late) so I'll do my best to remember the recipe, but please play with the ingredients and spice level on your own :)

I'm a bit of a documentary nerd. I absolutely love documentaries - usually the ones about food, the climate, discovery, our societal impacts at home and around the world, and scientific research.
Most of my documentaries are watched on Netflix and through CBC. I also try to read and educate myself on these topics. Now, I am not a scientist, nor am I a doctor. I did not spend years learning research methods, and I always have to look up...
Growing up, I never understood how my mum could possibly eat miso! I have now learned the errors of my ways. Even then, it took me until recently to endeavour to make my own miso soup.
Here is my quick, loaded, miso soup. Add/subtract as you like!
Note: this can also be assembled in a mason jar with boiling water added when you're ready to eat.
2 C Water
2 Tbsp White Miso
1/4 block Organic Medium Tofu - cubed
Vegetables - optional
So, I won at breakfast this morning!
Honesty here, I may have been slightly side-tracked while I was practicing yoga this morning...but, in my defence, I was dreaming up this amazingly delicious breakfast!
I'm pretty sure these would also work frozen and re-heated for week-day breakfasts!*
4 Eggs - I get my eggs from a coworker with backyard chickens so they were pretty small
Splash Mylk of choice - I use Cashew for all things
