Recipe: Simple Pad Thai

I call this one-pot-wonder "pad thai", but I'm pretty sure it only resembles a pad thai. Anyway, it's easy and yummy!

I have a few versions, depending on what sauces I have on hand, and what flavours I'm feeling that night.


 Base
1/2 block Organic Firm Tofu - cubed
1/2 Onion - julienned (optional)
2ish handfuls Kale Slaw (or coleslaw mix)
Bell Peppers - julienned
Broccoli or other Veggies (optional)

Recipe: Super Salad with Miso-Tahini Dressing

Yes, this is not the first time I've posted a variation of this salad, it's just so darn good!

This is one of those salads that has it all - rice, greens, crunch, protein, dressing - and is easily changeable.


Base
1 C Organic Short Grain Brown Rice - cook as directed
Can sub any other grain base of choice


Veggies
2 C Kale - massaged & ripped
2 C Lettuce - ripped/cut
2 Bell Peppers - any colours, sliced

Recipe: Vegetarian Burrito Bowl

I could seriously eat all the burrito bowls! And I, finally, managed to make one at home – I buy a lot of them, so this is a big cost-saver for me.

Here is my super easy vegetarian burrito bowl “recipe”:

Rice
  • 1 Cup White or Brown Rice of choice
  • 1/2 Juice from a Lime
  • Cilantro to taste
Vegetables
  • 1 Red or White Onion
