I call this one-pot-wonder "pad thai", but I'm pretty sure it only resembles a pad thai. Anyway, it's easy and yummy!
I have a few versions, depending on what sauces I have on hand, and what flavours I'm feeling that night.
1/2 block Organic Firm Tofu - cubed
1/2 Onion - julienned (optional)
2ish handfuls Kale Slaw (or coleslaw mix)
Bell Peppers - julienned
Broccoli or other Veggies (optional)
Rice/Glass Noodles - prepared as directed (slightly undercooked)
1/2 tsp Chili Garlic Paste - or more to taste
1 tsp Oyster Sauce - or you could use Vegan Fish Sauce
You could also use a pre-made Pad Thai Sauce (I use Thai Kitchen and add a little Chili Garlic)
Fry the Tofu in a little oil
Add the Veggies
Add pre-cooked Noodles
If needed, you can add more tamari
